My Husbands Birthday Dinner

The Husband wanted to cook everything outside.
His menu, fire roasted chicken, skillet beans, garden salad
and a bottle of wine we have been saving for a special occasion.
He rigged a rotisserie over an oak fire. The chicken is herb stuffed, tied up and slow cooked. We forgot how long it took to roast because the cook was drinking Chateau Montelena (prize winning wine from the film "Bottle Shock").
The Beans were a mix of pinto, red and white beans slow cooked with onions, garlic, tomatoes and some red pepper flakes finished off in an iron skillet on the fire.

Next he made a simple green salad from the garden.
A lemon, anchovy dressing.
Just about perfect!
